For both the pulp and rind, Sorrento citrus fruit are used: oranges, mandarins and especially Sorrento IGP lemon, the latter in minimun quantities of 150 gr per 100 gr of marmalade, free from pothological symptoms such as mould, and free from even the smallest diseased spots, bruising and lack of consistency
